A bakery oven-rack caster is the rolling corner under a loaded rack that enters a rotating rack oven, rack proofer, or similar high-heat line. It must hold shape when parked hot, survive flour and grease in the swivel, and bolt to the OEM plate pattern. At CasterHQ that means a 475°F-class wheel (most often glass-reinforced green epoxy), a steel swivel or rigid frame, and — on completes and yokes — the primary U.S. bakery plate 3-1/8″ × 4-1/8″.
Floor failures usually look like a flat-spotted tread, a seized raceway, or an oval axle hole. Shop this hub by which part failed: the whole corner, only the wheel, or only the yoke.

Many shops refresh all four corners once, then stock matching-bore epoxy wheels for later PM. That keeps overall height consistent (~5-1/8″ with a 4″ wheel) so the deck stays level.
Two measurements prevent most bakery mis-orders. First, the top plate on completes and yokes: the dominant OEM pattern is 3-1/8″ × 4-1/8″ (bolt-hole centers commonly near 2-1/16″ × 3-1/8″ — verify on your rack). Second, the axle bore: 5/16″ is OEM Standard on most U.S. bakery oven-rack casters; alternate bores (3/8″, and 1/2″ on wheels) cover rebuilt fleets. A 5/16″ wheel belongs on a 5/16″ axle — do not force a mismatch.
Material here centers on high-temp green epoxy for continuous 475°F bakery heat, with glass-filled nylon and stainless Heatwave completes when wet cycles or washdown drive the choice. Confirm capacity and published temperature on each product card before ordering a four-corner set.
Baxter, Hobart, BKI, Vulcan, and related rack-oven lines commonly use the same 3-1/8″ × 4-1/8″ bakery plate class. That does not make every model identical — check bolt-hole centers and overall height against the caster you are replacing. Complete caster when the plate or swivel is damaged, or you want plate + swivel + wheel as one unit. Wheel only when the yoke is sound. Yoke only when the frame failed but you have (or will order) a matching-bore epoxy wheel.
3-1/8″ × 4-1/8″ on completes and yokes — the primary OEM bakery rack pattern. Wheels have no plate; plate size does not apply to wheel-only SKUs.
5/16″ is OEM Standard on most U.S. bakery oven-rack axles. Order matching wheel and yoke bore unless you measured a different axle. Alternate bores (3/8″, 1/2″ on wheels) exist for rebuilt fleets — measure first.
