How to Choose

1. Confirm Leg Tube ID

1-1/2" inside diameter is the standard for commercial stainless prep tables (Advance Tabco, Eagle Group, John Boos, Vollrath, Duke). Measure with calipers. Lighter-duty stands may use 1-3/8" — we stock that adapter size too.

2. Lock Configuration

Total Lock prevents both wheel roll AND swivel rotation — the safest choice when food handlers lean on the table. Top Lock stops wheel only. Plain swivel saves cost when rolling stability is not critical (cold prep against a wall).

3. Wheel Material

Gray TPR is the kitchen default — non-marking, quiet, easy to clean. Urethane handles greasy floors better and has higher capacity. For high-temperature cooking line (next to fryers, ovens), consider high-temp phenolic or steel — not these.

4. Set of 4 vs Set of 6

Most stainless prep tables use 4-leg construction (set of 4). Heavy-duty 6-leg tables, prep tables with a built-in undershelf, or work tables 8+ feet long use 6 casters. Confirm leg count before ordering.

Engineer Tip: Stainless steel yokes cost 20-30% more than zinc-plated but pay back in 2 years on a busy kitchen floor. Zinc-plated yokes pit and rust where sanitizer puddles on the swivel bearing — the swivel seizes, then the caster has to be replaced. Stainless yokes outlast the table itself.

Frequently Asked Questions

Are stainless steel casters worth the premium over zinc-plated?

In commercial kitchens, yes. The recurring exposure to quat sanitizers, hot water, and food acids attacks zinc plating. Stainless yokes do not rust and the bearings last 3-5x longer in washdown environments. For prep tables in cold storage or dry stockrooms, zinc-plated is fine.

Are these casters NSF certified?

The casters themselves are NSF-compatible (food-safe materials, smooth surfaces, easy clean). NSF certification is at the assembled table level, not the individual caster. If your prep table holds an NSF rating, replacing failed casters with equivalent specs preserves it. Confirm with your NSF auditor if your installation is being inspected.

What is the difference between Top Lock and Total Lock?

Top Lock pushes a brake pad down onto the wheel from the top — it stops the wheel from rolling. Total Lock additionally locks the swivel raceway so the caster cannot rotate. Total Lock is preferred for prep tables that get jostled during service.

Will stainless casters fit Advance Tabco / Eagle Group / John Boos tables?

Yes — Advance Tabco, Eagle Group, John Boos, and Vollrath all use 1-1/2" ID leg tubing on standard prep tables. Our stainless caster sets use the matching 1-1/2" expanding stem. Confirm leg ID with calipers if your table is older or imported.

Do stainless casters change the work height?

Yes — they raise it. A standard 3" prep table caster adds ~4 inches to total height; 5" casters add ~6 inches. Account for this in your ergonomic planning — tall casters can raise a 34" prep table to 40", which is uncomfortable for most operators.

How do I install expanding stem casters in a stainless leg?

Insert the rubber-sleeved stem into the bottom of the hollow leg, then tighten the nut on the underside of the caster yoke. The rubber sleeve expands and grips the inside of the tube. No drilling, no welding, no special tools beyond a wrench.

Can I retrofit casters to a stationary stainless table?

Yes if the legs are hollow tubing (most are). Saw off the foot pad if the legs end in a flat plate. Insert the expanding stem caster. The legs must be hollow with a measurable ID — solid legs require a different mounting solution (saddle plates).
